Ingredients:
- 2 cups pinto beans (soaked overnight)
- 1 lb ground beef
- 1 onion, diced
- 2 cloves garlic, minced
- 1 can diced tomatoes (optional)
- 1 cup diced green bell pepper
- 2 tablespoons chili powder
- 1 teaspoon cumin
- Salt and pepper to taste
- Tortillas for serving
Instructions:
- Cook the beans: In a large pot, add the soaked pinto beans with enough water to cover them. Bring to a boil, then reduce the heat to simmer and cook until soft, about 1-2 hours.
- Cook the ground beef: While the beans are cooking, heat a pan over medium heat. Add the ground beef and cook until browned. Drain any excess fat and set aside.
- Add the flavor: In the same pan, add the diced onions, garlic, and bell pepper. Sauté for 3-4 minutes until softened. Then add the chili powder, cumin, salt, and pepper, and cook for another minute.
- Combine: Once the beans are tender, add the cooked beef mixture to the beans. If you like, you can also add a can of diced tomatoes for extra flavor. Stir everything together and let it simmer for an additional 10 minutes to blend the flavors.
- Serve: Warm the tortillas, and serve the beans with the tortillas on the side for dipping or wrapping.
