Potatoes & Green Beans
A comforting, flavorful side dish made with tender potatoes and seasoned green beans. It’s simple, hearty, and perfect alongside roasted chicken, grilled meat, or as a satisfying meal on its own.
📝 Ingredients
1½ lbs (680 g) baby potatoes, halved
1 lb (450 g) fresh green beans, trimmed and cut into pieces
1 small onion, diced
3 cloves garlic, minced
3 tbsp olive oil or butter
1½ cups chicken or vegetable broth
1 tsp salt, or to taste
½ tsp black pepper
1 tsp paprika
½ tsp dried thyme
½ tsp dried parsley
½ tsp onion powder
½ tsp garlic powder
1 tbsp Worcestershire sauce (optional)
3–4 slices cooked bacon, crumbled (optional)
👩🍳 Instructions
Prepare the vegetables:
Wash the potatoes well and cut them into halves or bite-sized pieces. Trim the green beans and cut them into smaller pieces.
Sauté the aromatics:
Heat the olive oil or butter in a large pot or Dutch oven over medium heat. Add the diced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds.
Add the potatoes:
Add the potatoes and stir well so they become coated with the seasoned oil. Sprinkle in the salt, black pepper, paprika, thyme, parsley, onion powder, and garlic powder.
Add the green beans and broth:
Add the green beans, then pour in the broth. If using Worcestershire sauce, add it now. Stir everything together.
Simmer:
Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 25–35 minutes, stirring occasionally, until the potatoes are fork-tender and the green beans are cooked through.
Finish the dish:
Taste and adjust the seasoning. If using bacon, stir the crumbled cooked bacon in during the final 5 minutes.
Serve:
Serve hot with a little of the flavorful cooking broth spooned over the potatoes and green beans.

For extra flavor, finish with a small pat of butter and a sprinkle of fresh parsley just before serving. This dish pairs especially well with roasted chicken, beef, pork-free sausage, or grilled fish.
