Slow Cooker Garlic Herb Pot Roast

Slow Cooker Garlic Herb Pot Roast
Description

Nothing beats the comforting aroma of a Slow Cooker Garlic Herb Pot Roast slowly cooking throughout the day. This classic recipe transforms an inexpensive beef chuck roast into an incredibly tender, juicy meal that’s infused with buttery garlic, fragrant rosemary, thyme, and sweet onions. Every bite practically melts in your mouth after hours of slow cooking, while the rich cooking juices create a savory gravy that’s perfect for spooning over mashed potatoes, rice, or crusty bread.

The secret to this recipe is the garlic herb butter that’s poured over the roast before it cooks. As the butter melts into the beef, it combines with beef broth, onions, and herbs to create an unbelievably flavorful sauce. The onions become soft and sweet, while the roast absorbs every bit of the rich, aromatic broth.

Whether you’re preparing Sunday dinner, hosting family, or simply wanting a stress-free weeknight meal, this slow cooker recipe delivers restaurant-quality flavor with very little effort. Pair it with roasted vegetables, mashed potatoes, buttered noodles, or steamed green beans for a complete comfort-food feast. Best of all, leftovers taste even better the next day, making this an excellent meal-prep recipe.

3–4 lbs beef chuck roast
2 tsp kosher salt
1 tsp freshly ground black pepper
1 tsp smoked paprika
1 tsp garlic powder
1 tsp onion powder
2 tbsp olive oil
For the Garlic Herb Butter

5 tbsp unsalted butter
8 garlic cloves, minced
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme leaves
1 tsp Italian seasoning
1 tbsp Worcestershire sauce
For the Slow Cooker

2 large onions, cut into thick slices
2 cups beef broth
2 bay leaves
Optional Vegetables

4 carrots, cut into large pieces
1 lb baby potatoes
2 celery stalks, sliced
For Garnish

Fresh parsley, chopped
Extra rosemary sprigs
Instructions

Pat the chuck roast dry using paper towels.
Season both sides generously with salt, black pepper, smoked paprika, garlic powder, and onion powder.
Heat the olive oil in a large skillet over medium-high heat.
Sear the roast for 3–4 minutes per side until deeply browned.
Arrange the sliced onions in the bottom of the slow cooker.
Place the browned roast on top of the onions.
If using carrots, potatoes, or celery, arrange them around the roast.
In a small saucepan, melt the butter over medium-low heat.
Add the minced garlic, rosemary, thyme, Italian seasoning, and Worcestershire sauce. Cook for about 1 minute until fragrant.
Slowly pour the garlic herb butter over the roast.
Add the beef broth around the sides of the slow cooker without washing the seasoning off the meat.
Add the bay leaves.
Cover and cook on LOW for 8–9 hours or HIGH for 5–6 hours, until the beef is fork-tender.
Carefully remove the roast and let it rest for 10 minutes before shredding or slicing.
Discard the bay leaves.
Spoon the onions and flavorful cooking juices over the beef before serving.
Garnish with fresh parsley and rosemary.
Tips

Chuck roast is the best cut because its marbling becomes incredibly tender during slow cooking.
Searing the beef first adds a richer, deeper flavor.
Fresh garlic and herbs provide the best taste, but dried herbs can be substituted if needed.
Add mushrooms during the last 2 hours for extra flavor.
For a thicker gravy, whisk 2 tablespoons cornstarch with 2 tablespoons cold water and stir it into the cooking liquid during the last 20 minutes.
Let the roast rest before slicing so the juices stay inside the meat.
Leftovers are perfect for sandwiches, tacos, pasta, or shepherd’s pie.
Notes

Refrigerate leftovers in an airtight container for up to 4 days.
Freeze cooked pot roast with some of the cooking liquid for up to 3 months.
Reheat gently with a splash of beef broth to keep the meat moist.
This recipe can also be prepared in a Dutch oven and baked at 325°F (165°C) for about 3½–4 hours.
Q&A

Can I skip searing the roast?
Yes, but searing develops a flavorful crust that makes the finished dish even more delicious.

Can I use dried herbs instead of fresh?
Absolutely. Use about one-third the amount since dried herbs are more concentrated.

What other vegetables work well?
Parsnips, mushrooms, sweet potatoes, and turnips are excellent additions.

Can I prepare everything the night before?
Yes. Assemble all the ingredients in the slow cooker insert, refrigerate overnight, then start cooking the next morning.
