Classic French Onion Soup
French Onion Soup is one of those timeless comfort foods that turns a few simple ingredients into something truly unforgettable. Sweet, deeply caramelized onions are slowly cooked until golden brown, then simmered in a rich beef broth with herbs and a splash of Worcestershire sauce for incredible depth of flavor. Each bowl is topped with a slice of toasted French bread and a generous layer of melted Gruyère cheese, then broiled until bubbly and beautifully browned. The result is a warm, cozy soup that’s perfect for chilly evenings, family dinners, or whenever you’re craving a restaurant-quality meal at home.

- Total: 1 hour 30 minutes
- Servings: 6
Ingredients
For the Soup
- 4 large yellow onions, thinly sliced
- 4 tablespoons unsalted butter
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 8 cups beef broth
- 1 tablespoon Worcestershire sauce
- 1 teaspoon fresh thyme leaves (or ½ teaspoon dried thyme)
- 1 bay leaf
- ½ teaspoon black pepper
- Salt to taste
- ¼ cup dry white wine (optional)
For the Topping
- 6 thick slices French baguette
- 2 cups shredded Gruyère cheese
- ½ cup grated Parmesan cheese
- Fresh parsley, chopped (for garnish)
Instructions
- Heat the butter and olive oil in a large Dutch oven or soup pot over medium heat.
- Add the sliced onions and cook slowly, stirring often, for 35–45 minutes until they become soft, caramelized, and a rich golden-brown color. Don’t rush this step—it creates the soup’s signature flavor.
- Stir in the minced garlic and cook for 1 minute.
- If using white wine, pour it in and scrape up any browned bits from the bottom of the pot. Let it simmer for 2 minutes.
- Add the beef broth, Worcestershire sauce, thyme, bay leaf, black pepper, and a pinch of salt.
- Bring the soup to a gentle boil, then reduce the heat and simmer uncovered for 25–30 minutes.
- While the soup simmers, toast the baguette slices in a 375°F (190°C) oven for about 8 minutes until lightly crisp.
- Remove the bay leaf from the soup and taste, adjusting the seasoning if needed.
- Ladle the soup into oven-safe bowls.
- Place one toasted baguette slice on top of each bowl.
- Sprinkle generously with Gruyère cheese and a little Parmesan.
- Broil for 2–4 minutes until the cheese is melted, bubbly, and golden brown.
- Garnish with fresh parsley and serve immediately while hot.
Tips
- Yellow onions provide the best balance of sweetness and flavor.
- Gruyère cheese is traditional, but Swiss or mozzarella can be used if needed.
- For extra richness, simmer the broth a little longer.
- Use homemade beef broth if available for the deepest flavor.
- Be careful when removing the bowls from the broiler—they will be extremely hot.
Storage
- Refrigerate leftover soup (without the bread and cheese) in an airtight container for up to 4 days.
- Freeze for up to 3 months.
- Reheat gently on the stovetop, then add fresh toasted bread and cheese before broiling for the best results.
This rich, cheesy French Onion Soup is comforting, flavorful, and perfect for serving with a crisp green salad or a simple sandwich for a complete meal.
